Bluebonnet Cafe




The Bluebonnet Cafe is worth a drive down US-281 from Austin or up from San Antonio. This place is one of my favorite breakfast joints.  The cafe must have a contract with a hen house somewhere.  The eggs are so fresh some days that they taste like the hens just dropped them.  Any crowd seems not to be a problem; I was always able to get a table.  


Eggs, Bacon, Grits:


Already said enough about the eggs.  Bacon is thick and crisp.  Grits are great for Texas and pass the pepper test.



Steak-n-Eggs:


See the Texas toast ... really good stuff.  The menu says they serve a six-ounce sirloin, but it LIES!  This one was somewhere between 8-9 ounces.  And they cook your steak just the way you want.


Pancakes:


Pancakes are meant to be served with sausage, lots of sausage.  Their "hotcakes" are particularly crisp the way I like them.  Thick pancakes, I use syrup.  Crisp ones like those above I use just butter.


Hashbrowns, Biscuits, etc.


Hasbrowns are crisp.  Biscuits are a northwestern style.  More cake-like than the flaky southern style.  I like both.


Biscuits & Gravy:


Good cream gravy for the biscuits.  Not too thick, not too thin.  Baby Bear would say it's just right!

Grits:


Great place for Southern-style grits in Texas.  Because of that and being a southern boy, I seldom get the hashbrowns which are good in their own right.
